Instructions

  1. 1 Heat a frying pan , once hot, add olive oil and garlic. Sautee for a minute. Add pork and stir occasionally until cooked. Add potatoes, carrots, menudo mix and water. Cover and cook until potatoes are firm. Once firm, turn off heat and add bell peppers and onions. Cover for five minutes. Add black pepper, turmeric and chopped green onions. Enjoy over hot rice.
