Multi-Color Pasta with Cucumbers/ Black Olives & TomatoeCucumbers
Ingredients
- 3 cups cooked Mulit-Color Pasta
- 1 cup cut black olives
- 1 medium chopped cucumber
- 7 cut in halves cherry tomatoes
- 1/8 cup olive oil
- 1/2 cup Apple Cider Vinegar
- Dry Italian dressiing (as desired)
- Salt (as desired)
Instructions
Add all ingredients together, mix well and refridgerate.You may also add in can tuna or egg or salami or pepporoni.

Corn soup
Ingredients
- 2 cups Chicken breast
- 1 can while kernel corn with juice
- 4 cups frozen corn kernels
- 6 cups water
- can coconut milk
- Black pepper (desired amount)
- Salt (desired amount)
- Chicken bouillon (desired
- 4 cloves crushed garlic
- 1/cup chopped onions
- Corn starch (to thicken)
- Finadene ( soy sauce, vinegar, spicy peppers , garlic )
Instructions
Boil on high heat the chicken in water until cooked. Add onions, seasonings, coconut milk and corn for ten minutes. Lower hear to medium and mix 2 tablespoon corn starch with 2 tablespoon water in a cup and add to pot stirring constantly. The mixture should thicken. Off stove and continue to stil for three minutes. Enjoy with rice or by itself ( I added lemon,soy with onions sauce).

Ingredients
- 1/2 yellow onions cut into think shoves
- Teaspoon Oliva oil
- 1 large can Sardines in Tomato sauce
- Black pepper to taste
- Garlic powder to taste
Instructions
Heat frying pan on medium and add olive oil. Once hot add Sardines and Sautee for two minutes. Add onions , stir in and off stove. Enjoy worth tortillas or rice.

Ricotta Stuffed Shells
Ingredients
- 12 large pasta shells (Buy Pasta)
- 15 oz container part-skim ricotta cheese (Buy Ricotta)
- 2 cups fresh spinach, chopped
- 1 egg, lightly beaten
- 1/2 cup grated Parmesan cheese
- 2 cups marinara sauce
- 1/4 tsp nutmeg
- 2 garlic cloves
Instructions
Cook pasta shells al dente. In a bowl, mix ricotta, spinach, egg, Parmesan, and nutmeg. Stuff the shells with the mixture. Place stuffed shells in a baking dish with marinara sauce. Bake at 375°F (190°C) for 20-25 minutes until bubbly. Serves 4.

Chicken Fajitas
Ingredients
- 2 chicken breast's
- 1/2 green bell pepper
- 1/2 sliced yellow onions
- 2 cloves garlic
- 1 cube chicken bouillon
- Black pepper
- Taco seasoning
- Olive oil
- Floor tortilla
Instructions
Heat medium frying man, add garlic and chicken. Cook halfway, then add all rest of seasonings. Once chicken is cooked add bellpepper and onions. Heat tortilla, add your chicken dish in 2 tablespoons in the middle of tortilla. Add cilantro, salsa, greenchilies & sour cream..Enjoy

Chicken Fajitas

- 4 cups thinly sliced chicken breasts
- 2 cups thinly sliced green bell pepper
- 1 cups thinly sliced yellow bell pepper
- 1 cup thinly sliced red bell pepper
- 1 cup thinly sliced orange bell pepper
- 1 whole onion
- 2 tablespoons chicken buillion
- Black pepper
- Low sodium Taco seasoning
- 2 tablespoon water
- 1 tablespoon olive oil
- 4 cloves garlic
Instructions
Heat a wok or frying pan. Add oil/garlic and saute, then add chicken. Halfway cooked, add chicken buillion, black pepper, taco seasoning and water. Once cooked, add onion, all bell peppers and cook for a minute. Turn off stove. Cover for a minute. Enjoy with tortillas or over rice with sourcrean, cilantro and lime.

Beef , Cabbage and Tomatoes
Ingredients
- Thin cut lean beef
- 1 whole onion
- 1/2 head of cabbage
- Small tomatoes
- 4 cloves of garlic
- 1 tablespoon chicken boullion
- 1/3 cup of apple cider vinegar
- 1/4 cup low sodium soy sauce
- Black pepper (as desired)
- 2 tablespoon olive oil
Instructions
Heat up a wok or large frying pan. Add olive oil and garlic. Saute until garlic translucent. Add beef and cook halfway. Add chicken boullieon, soy sauce, black pepper. Cook beef and set aside. Using same pan, add cabbage/onion and cook halfway. Off stove. Add beef /tomatoes and stir well. Enjoy alone or with rice.

Shrimp with BokChoy
Ingredients
- 1 lb thawed jumbo shrimp (cleaned)
- 2 lbs fresh bokchoy (cleaned and soak in water)
- 2 tablespoon chicken boullion
- Black pepper
- 6 garlic cloves( chopped)
- 1 whole onion (cut longway)
- 2 teaspoon Olive oil
- 2 tablespoon water
Instructions
Heat up a large wok or frying pan. Add olive oil and saute garlic until translucent. Add shrimp, water, chicken boullion, black pepper. Cook shrimp. Once shrimp is pinkish red. Off stove and add onions and bokchoy. Cover. Enjoy alone or with rice.

Beef Candalaria Soup
Ingredients
- 2 cups lean beef or two patties crumbles
- 1 can diced tomatoes or tomato paste
- 2 cups mixed vegetables
- 4 cloves of garlic- diced
- 1 whole onion- diced
- 2 tbsp chicken bouillion (or beef)
- 1 teaspoon salt
- Black pepper (by preference)
- 2 Bean thread noodles (sokaed and cut in preferred length)
- 6 cups of water
Instructions
Heat up a large pot. Saute the beek with garlic. Add chicken boullion, salt, black pepper and onions. Saute until onions translucent. Add mix vegetables and diced tomatoes. Stir and add water. Cook until boiling. Drain bean thread noodles and add. Cook for 10 minutes . Off stove and cover. Enjoy with hot rice or alone
